The history of Bún Quậy is written on a big board hung inside. Bún Quậy, it’s said, originated from the central region’s bún tôm (shrimp noodles) and was first served on Phu Quoc in 1995. The family then created its own version, dubbing it Bún Quậy, served with fresh noodles, a mix of shrimp and fish paste, and squid, and is only prepared when ordered.

Quậy means ‘stir’ in Vietnamese. The restaurant has an open kitchen where you can see the young chef prepare every step. The key element is the use of the freshest seafood, as its broth is the water from boiling noodles and seafood. Bún Quậy is known as a simple yet subtle Phu Quoc dish and is served with chili and kumquat salt sauce, which guests prepare to their liking.

The restaurant recently opened an outlet in HCMC. Prices range from VND30,000 to VND50,000 per bowl.
