    Hilton Hanoi Opera and Hilton Garden Inn Hanoi have appointed Ms Roxanne Castillo as their new Cluster Executive Chef, overseeing all facets of the kitchens to deliver an exceptional culinary experience at both. As the first female Cluster Executive Chef in Vietnam-based Hilton hotels, Roxanne brings with her nine years of culinary experience. As Executive Sous Chef at Hilton Kuala Lumpur, she was responsible for managing ten stellar restaurants and bars as well as catering for meetings and events at the flagship property. While delivering consistently high-quality food and service, she also played a critical role in training and coaching a brigade of more than 200 chefs at the hotel.

    AVANI Hotels & Resorts has appointed Mr Hieu Tong as General Manager of AVANI Quy Nhon Resort & Spa. A Vietnamese national, Mr Hieu studied international hospitality in Australia and has more than a decade of hotel management experience. After starting his hospitality career with the pre-opening team at the Park Hyatt Saigon, he progressed to rooms and revenue management at some of Vietnam’s leading city hotels and resorts, including the Sofitel and InterContinental in HCMC, Chen Sea Resort & Spa Phu Quoc, and Grand Mercure in Danang. In 2014, Mr Hieu took on his first role as General Manager, at Mercure Hanoi La Gare, and prior to joining AVANI he was Deputy Director at the BRG Group’s Hospitality Division.

    Sofitel Legend Metropole Hanoi has named Australian Paul Smart as its new executive chef. Prior to joining the iconic Hanoi property, Paul was the executive chef at SO Sofitel Bangkok for five years, where he won the Iron Chef Thailand TV program in 2012 and 2013. As the hotel’s new executive chef, he will oversee operations at the French restaurant, Le Beaulieu, the Vietnamese restaurant, Spices Garden, the Italian eatery, Angelina, and the hotel’s three bars: Bamboo Bar, La Terasse, and the recently-revamped Le Club.

He joins the Marriott International family from the Grand Hyatt Guangzhou Hotel, China, where he was a Director of Sales. He previously managed sales for the Hyatt Regency Jing Jin City Resort and Spa in Tianjin.     Eastin Grand Hotel Saigon has just appointed Mr Maurizio Susan as its New Culinary Director. Born in Italy, Mr Susan is first and foremost a self-confessed food nerd. He boasts an impressive culinary career spanning more than 25 years, honing his skills in Italy and France before working his way up the culinary ladder. Kick-starting his career at culinary institutions in Italy and Austria, Mr Susan then moved to Germany, where he worked at his first Michelin-star restaurant, in Hamburg. He then moved to London and worked for the famous Savoy Hotel, where he won his first culinary award. Three years later, Mr Susan found himself in Barcelona, working at the prestigious Hotel Juan Carlos I. It was here that he began to gain international recognition for his cooking style and creativity.
